Taco Soup Instant Pot
Ingredients:
1-2 pounds of ground meat
1/4 cup chopped onion (more or less)
2 cans of whole kernel corn - undrained
2 cans of pinto beans - undrained (You can substitute kidney or black beans- I just use what I have at the time.)
1 can of diced tomatoes - undrained
1 can of rotel tomatoes - undrained
1 small can of chicken broth (optional)
2 packs of taco seasoning
1 pack of dry ranch dressing mix
I brown my ground meat on the stove or in the microwave (tupperware microwave cooker). You can brown on the sauté setting with the instant pot. I would spray with nonstick or add a little olive oil if you use that method. Mainly just get the meat cooked without any pink. (I season my ground meat as it's cooking with garlic and onion powder just to add some flavor.)
After browning the ground meat, combine all ingredients in the instant pot. The chicken broth is just for extra liquid. I prefer it over water for a little more flavor.
Set to manual for 8-12 minutes. I set mine for 10. I allow it to naturally release.
Serve over tortilla chips and top with shredded cheese!
