Instant Pot White Rice

Ingredients: Rice Chicken broth or water Olive oil I used 1 cup of rice and 1 1/2 cup of chicken  broth. I added about 1/2 tablespoon of olive oil. Set the instant pot to rice. It needs to naturally release. Do not manually release.  Brown rice and other varieties vary. The rice setting is for white rice only. 

Tenderized Steak and Gravy Instant Pot

Ingredients: Round/cube Steak 1 can Cream of chicken (or cream of mushroom) 1 pack Au Jus Packet 1 pack Beefy Onion Soup Mix Dry Pack 1 Can of beef broth Seasonings - salt, garlic powder, onion powder Set instant pot to sauté. Combine cream of chicken and beef broth. Whisk on sauté until smooth. Add dry ingredients and seasonings to this mixture. Mix well. Add meat. I try to make sure the mixture covers the meat.  Cover and seal. Set on manual for 20 minutes and natural release.  ***Gravy is not super thick, so if you went it thicker, add a gravy packet or corn starch.  Should be tender and fall apart!!

Instant Pot Chili

Instant Pot Chili Ingredients  1 Pack of Chili Seasoning (I used McCormick) 1 lb of ground meat 1 can of kidney beans (undrained) 1 can of chili beans (undrained) 1 can of diced tomatoes  1 can of tomato sauce 1 cup of chicken broth 1 teaspoon garlic powder (optional) 1 teaspoon onion powder (optional) 1/4 teaspoon salt (optional) Brown the meat. (I add frozen chopped onion if I have it) you can brown meat in the instant pot or in a separate pan.  Combine all ingredients in instant pot. Set on manual for 15 minutes. I like to natural release.  Shredded cheese, crackers or chips finish this off!!

Pasta Salad

Ingredients  1 lb of thin spaghetti  1 pint of cherry red tomatoes  1 Cucumber (optional) 1 Green bell pepper 1 Red pepper 1 Red Onion (optional) 2 cans of sliced black olives (2 1/4 ounce cans) 16 ounces of Italian dressing (Olive Garden is my fav) 1/4 cup grated Parmesan  Directions: Prepare spaghetti. Recommend breaking into 1-2 in pieces. (If you like the instant refer to the "Spaghetti Noodles Instant Pot" recipe.)  Split tomatoes in half. Chop other vegetables. I peel my cucumber. I also omit the onion and just add onion powder.  Once the spaghetti is ready, drain and rinse.  Combine noodles and vegetables. Toss in the dressing. (I have layered my ingredients in a ziplock bag and mixed before adding the dressing.) Chill for 3 hours or over night. Serve chilled! 

Spaghetti Noodles Instant Pot

I hate waiting on water to boil for pasta!!! I use my instant pot for noodles as much as I do chicken.  Ingredients: 1lb package of Noodles (thin or regular spaghetti) 3-4 cups of liquid (Chicken Broth or split between water and broth) 1/4 teaspoon Onion powder (optional) 1/4 teaspoon Garlic powder (optional) 1/4 teaspoon Salt (optional) Directions: Break noodles in desired length and place into instant pot. Poor in liquid and optional ingredients. Set on manual for 3 minutes. Manual release. Drain extra liquid. (If I am using for pasta salad I rinse with cold water. See that recipe separately.) Optional ingredients: I just like flavor. I never actually measure them out, but remember in the instant pot, you should add a little extra seasoning.  Side notes: If I am using the noodles for chicken spaghetti, I cook my chicken first and then remove it from the instant pot and use that liquid. Cornbread

Cornbread is a favorite for the cold months to go with soups or any of he warm comfort foods. However, it cannot be forgotten in the summer time with fresh vegetables!! Growing up cornbread was served basically everyday. This is my quick and easy recipe that is just a simple go to. Is it the fluffiest best ever...... my husband and kid love it, so it works for us.  I prefer a cast iron skillet. Medium size. I have to use a little Crisco on it... I usually preheat the oven and skillet to 400. Also, I rub the skillet down with Crisco. Lightly sprinkle corn meal on it prior to preheating.  Then I use the following recipe.  1 cup cornmeal 1 cup self rising flour 1 cup milk  1 egg 1/4 cooking oil Mix together and pour into preheated skillet. Caution... that skillet will be hot!! Bake on 400 for 20-25 minutes. If the skillet is larger and batter appears thins, I recommend checking before 20 minutes. Key is not to over cook! 

Popcorn Shrimp Air Fryer

I cooked these (Gorton’s Popcorn Shrimp) on 350 for 8-10 minutes.  Cook temp and time may vary. I just trial and error. First time I used my air fryer.... I did French fries, popcorn shrimp, and chicken bites (Sam’s version of the almost chick fila nuggets.)
